Ingredients:
• 1 Pound Potatoes, peeled
• 1 teaspoon Salt
• 3 Tablespoons Olive Oil
• 1 and 1/2 Cups Flour
• 1 Tablespoon Olive or Avocado Oil
• 2 cloves garlic, minced
• 1 Shallot, diced
• 1 Lb Grape Tomatoes
• 1/2 Cup of Tomato Jar Sauce
• 1 Cup of Spinach
• 3 Carrots, diced
• Seasonings to taste
