Food for Thought: Apple Muffins
Our guest presenter for this event is Veronica Ramirez, owner of Vero Pure Green, Health Coaching Services. She will be providing nutrition tips and teaching us how to prepare a healthy and delicious recipe. If you'd like to following along please make sure to have the following ingredients on hand:
• 2 cups rolled oats
• 8 medjool dates, pitted (about 3/4 cup)
• ½ cup olive oil
• ¼ cup maple syrup or date syrup
• 1-2 apples, grated (about 1-2 cups total)
• 2 eggs
• 1 teaspoon baking soda
• Pinch of salt and/or cinnamon (optional)
• Coconut/seeds/nuts/ dark chocolate chips (optional, for topping)
