Food for Thought: Mac and Cheese
Our guest presenter for this event is Veronica Ramirez, owner of Vero Pure Green, Health Coaching Services. She will be providing nutrition tips and teaching us how to prepare a healthy and delicious recipe. If you'd like to following along please make sure to have the following ingredients on hand:
INGREDIENTS
• 1 lb. elbow pasta (chickpea or regular)
• 6 cups of finely chopped broccoli
For the cheesy sauce
• ½ cups peeled and chopped potatoes
• 1 cup peeled and chopped carrots (about 2-3 carrots)
• 2 cups unsweetened milk (oat or almond milk works)
• ½ cup nutritional yeast
• 3 tablespoons olive oil
• 1 tablespoon lemon juice
• 1 tablespoon of salt
• 1 tablespoon cornstarch
• ½ teaspoon onion powder
• ½ teaspoon garlic powder
• ½ teaspoon smoked paprika
