NJSAP:Food for Thought: Banana Cream Pie
Our guest presenter for this event is Veronica Ramirez, owner of Vero Pure Green, Health Coaching Services. She will be providing nutrition tips and teaching us how to prepare a healthy and delicious recipe. If you'd like to follow along please make sure to have the below ingredients on hand:
For the Crust: • 1/3 cup melted coconut oil • 1 1/2 cups of graham cracker crumbs about 12 large crackers • 1/4 cup of coconut sugar
For the Pie Filling: • 2 cans full-fat coconut cream (14 ounce cans), refrigerated a few hours prior to use • 2–3 bananas, sliced • 1/4 cup pure maple syrup • 1/2 tablespoon vanilla extract • 1/4 teaspoon cinnamon
For Topping: • 1–2 sliced bananas (see note) • 1/2 cup chopped pecans or chopped almonds (optional)
